Blanched ground almonds are widely used in home baking and commonly used by people suffering with digestive issues as an alternative to wheat or corn flour when baking breads and cakes. Ground almonds are also known as almond flour or meal although almond flour is mainly made from dehydrated or de-fatted almonds to achieve fine oil free flour like product, almond meal is generally a coarser un-graded product.
Regular ground almonds can be regarded as "sweet" almonds; this is to prevent confusion between the less common "bitter" almond verities used in industrial baking.
